Swap salad recipe
Easy to make salad where you can swap your favorites in and out.
Since you've seen my grocery lists some of you have asked for some of my favorite meal recipes. I decided I would share my absolute favorite meal.
This salad is an easy structure to follow no matter what greens, protein, fat, and fiber you choose to add!
Just swap out your favorites if you're not a kale and salmon gal like me.
I do not know if I am alone over here, but I LOVE spinach. My dad says the food I eat tastes like dirt, but look who's got abs and is going to live to be 100...this girl!
Honestly though, I put spinach in my smoothies, salads, and I'm surprised I haven't figured out how to make a dessert out of it!
Anyways, if you don't love spinach as much as I do, swap it out for your favorite green. Maybe you like kale, romaine lettuce, arugula, or mixed greens? Awesome! Even micro greens pack a huge amount of nutrients!
Ingredients:
4 handfuls of spinach (greens/fiber)
½ of a Sweet Potato or 1 cup of carrots chopped and baked
20-30 grams of Salmon (protein) or 99% lean ground turkey (my favorite)
1 Celery stalk chopped
¼ Cucumber chopped
1 Lemon juice
¼ of an Avocado (healthy fat)
Spices:
- Black Pepper
- Turmeric or Cumin
- Rosemary
- Cinnamon
- Thyme
- Red Pepper Flakes
- Sesame Seeds
Directions:
After you figure out your swaps, wash and chop your greens and throw in big bowl.
Chop up carrots and sweet potato and spread on parchment lined baking sheet (no oil needed). Sprinkle with your favorite seasonings (no salt!). My favorites are black pepper and cinnamon. Bake for 20-30 minutes at 400 degrees. Flip and toss occasionally.
Rinse the salmon from the package and place skin side down on foil on cookie sheet. Season to your liking (I like black pepper), then slice lemons into circles and place on top of salmon before covering with foil. Cook for about 12-15 minutes on 400 degrees (no need to flip).
Next chop up celery and cucumber (these will stay raw).
Grab your avocado and lemon juice and mash together to make a dressing. If you aren't into this (like my boyfriend), just chop the avocado and toss it in with the celery and cucumber.
Next take your greens in the bowl and top with raw veggies, warm carrots and/or sweet potatoes and toss together with avocado lemon juice dressing and some turmeric and curry powder.
Plate and add salmon on top. I like to flake salmon and mix together, but be gentle if you toss it.
Sprinkle with sesame seeds and red pepper flakes and enjoy!
